COOKING TIME: 10 MIN

HEMP SEED RISOTTO INGREDIENTS

100 g DH® hemp seeds

1 onion A knob of butter

1 dash DH® hemp seed oil

400 ml liquid cream 30% M.F.

30 to 60 g grated Parmesan cheese (to taste)

TO PREPARE

Finely chop the onion, then sweat it in a frying pan over low heat with the butter and hemp seed oil. Stir in the cream and Parmesan. Lower the heat slightly and add the shelled hemp seeds.

Stir quickly to allow the risotto to soak up the fat.

Leave to cook for 5 min, stirring regularly, then taste the mixture: the seeds should be tender and still a little firm in the center.

AFGHAN FONDANT INGREDIENTS

100 g butter

100 g dark chocolate

3 g DH® 35% CBD Afghan resin

80 g egg yolks

50 g sugar

100 g Carambar® flour (optional)

TO MAKE Preheat oven to 180° C. Melt the butter and chocolate in pieces in a bain-marie. Grate the Afghan DH® resin into the bowl when the butter-chocolate mixture has melted. In a bowl, whisk the egg yolks with the sugar until pale.

Pour over the melted chocolate and stir, then stir in the sifted flour. Butter a baking tin and pour in the mixture. Bake for 8-9 min.

Let the fondant cool slightly before serving.
